PREPARATION

  1. Prepare the Sauce. Heat a pan over medium-high heat and add 2 tbsp olive oil. Sauté onion and garlic for 2 minutes until fragrant. Add the remaining sauce ingredients and simmer for 10 minutes. Set aside.
  2. Cook the Redefine Pulled Beef. In another pan, heat 2 tbsp olive oil over medium-high heat. Sauté sliced onions and cabbage until golden brown, about 10 minutes. Add another 2 tbsp olive oil to the pan. Add the Redefine Pulled Beef and cook, stirring until browned (about 8 minutes). Add the sauce, corn and black beans to the pulled beef Cook for an additional 5 minutes to incorporate flavors.
  3. Prepare the Guacamole. Mash the avocado with a fork. Combine with chopped tomato, onion, and coriander an season with lemon juice and a pinch of salt.
  4. Assemble the Burrito. Spread guacamole on the bottom of the tortilla. Top with the pulled beef mixture. Roll the tortilla to form a burrito.
  5. Toast the Burrito. Heat a pan to high heat and sear the burrito for 2 minutes on each side, toasting the tortilla.
  6. Cut the burrito diagonally in the middle and serve warm.

1 (150 g) White onion, sliced

½ cup (100 g) Corn kernels

½ cup (100 g) Black beans, cooked

4 tbsp. (56 g) Olive oil

¼ cup (70 g) Soy Sauce
