Lamb Patties with Tzatziki

PREPARATION

  1. Heat the oven to 200 degrees Celsius.  
  2. Prepare the root vegetables. Cut the vegetables into sticks and wedges and place on a baking sheet along with crushed garlic cloves and a few sprigs of rosemary. Drizzle over olive oil and a few drops of honey. Mix well with your hands and season with salt and pepper to taste. Place in the oven for approx. 35 min. 
  3. Prepare the lamb patties. In a large bowl mix the Redefine Lamb Kofta Mix with feta cheese, salt and black pepper. Form patties and set aside. Heat olive oil and butter in a large skillet over medium-high heat. Add the lamb patties to the pan and fry for 7 min until browned, turn several times. You may refer to the cooking instructions found on the product packaging as a guide. 
  4. Put the patties in the oven on the tray with the root vegetables for the last 3-5 minutes.  
  5. Prepare the Tzatziki. Grate the cucumber on a grater and squeeze out the water thoroughly through a sieve. Mix the cucumber with yogurt and pressed garlic. Season with salt and pepper. 
  6. Serve the lamb patties together with root vegetables, tzatziki, and salad.

1 package Redefine Lamb Kofta Mix (250 g) 

¼ cup (50 g) feta cheese (optional) *

1  tbsp. (15 ml) olive oil

½  tbsp. (7 g) butter *

¼ tsp. (5 g) salt

2 pinches (1 g) black pepper

Tzatziki

¼ (65 g) cucumber

¼ (65 g) cucumber ½ cup (100 g) yoghurt *

½ clove (3 g) fresh garlic

½ (15 g) lemon juice

¼ tsp (5 g) salt

1 pinch (0.5 g) black pepper

Roasted root vegetables

1 (250 g) large potato

1 (125 g) carrot

1 (150 g) beetroot

3 tbsps. olive oil

½ tsp. honey *

½ tsp. sea salt 

2 pinches (1 g) black pepper

1 cloves (3 g) garlic

1 sprig of thyme \ rosemary (optional)

*To make this recipe vegan, use a plant-based alternatives for the cheese, butter or yogurt. Substitute the honey with Silan (date) syrup.
