PREPARATION

 

  1. Grease and heat a grill to medium-high.  
  2. Caramelized the pears- Peel the pears and thinly slice. Dip the sliced pears in sugar, to coat.
    Place the slices on the grill for 2-3 minutes a side, until the sugar caramelizes, and the pears are golden. Remove the pears and set aside until ready to use. 
  3. Prepare truffles aioli- In a small bowl mix until smooth, the mayonnaise, honey or Silan, salt, balsamic vinegar, truffles paste and grated lemon zest. Set aside until ready to use. 
  4. Grill the burgers, flipping occasionally, for 10 minutes.

  5. Crumble the blue cheese into a small bowl.  
  6. Split and lightly toast the burger buns. Spread both sides with truffles aioli.  
  7. Layer the bottom of a bun with lettuce and sliced red onion, then a burger. Sprinkle with crumbled blue cheese and finish with slices of caramelized pear. 
  8. Cap with the bun top. 
  9. Serve with a side of fries and aioli.

Ingredients

4 hamburger buns

2 pears (340 g)

4 tbsps. (50 g) sugar

1 red onion (120 g) thinly sliced

1 Curly leaf lettuce (200g)

1.5tbspoons (20g) mayonnaise*

½ tsp. (2 g) salt

1 tbsp. (15 ml) balsamic vinegar

1tsp. (5 g) truffles paste

1 tsp. (7 g) honey* or Silan (date syrup)

1.5 tsp. (3 g) lemon zest, grated

2 tbsps. (30 g) blue cheese*

*To make the recipe vegan, use Silan instead of honey and substitute vegetable-based alternatives for the mayonnaise and blue cheese.
